I posted this recipe up the other night on my Facebook account and it got me thinking, why not post a recipe from somewhere on the net every now and again that I really like? A much better idea instead of keeping it to myself.
So here is the first of many, many really delicious healthy recipes. There will be Paleo, some Primal and some Gluten Free. Mains, snacks and desserts as well.
This time around it is a recipe that is incredibly simple but oh so tasty. It is from the blog Up Close and Edible. Emily has heaps and heaps of recipes on her blog and like i have said this is one of my favourites. It is a go to meal when we have no time for prep and especially on a cold night. Emily's version of the recipe calls for the use of coconut yoghurt of which she made herself. I have had at least to cracks at making coconut yoghurt and have only succeeded in slightly thickening up the milk. You can purchase coconut yoghurt from some shops (generally health food/wholefood shops) but the ones I have found are a little pricey and have a little bit to much sugar in them for my liking. My solution is to use coconut cream. I really like using the coconut cream as the fats seem to really crisp up the sweet potato and brussel sprouts. Brussel sprouts you say!! They are disgusting. That is exactly what my wife said prior to eating it the first time. She has had many attempts at trying sprouts and had never warmed to them, until this dish. They take on the curry flavour of the sauce and as mentioned above go all crispy and delicious.
